Tomato Burrata Salad – Spend With Pennies


This rustic tomato burrata salad is chock full of so many robust flavors!

Creamy burrata cheese is arranged with tomatoes and onion and then tossed with arugula. It’s all drizzled with balsamic and a bit of pesto for the perfect summer salad recipe.

Serve it as an appetizer, a light lunch or even pair it with a steak dinner.

What is Burrata Salad?

  • Burrata is happiness. Seriously though, this cows milk cheese is similar to fresh mozzarella but made with extra heavy cream in the middle which gives recipes a rich, creamy flavor & texture.
  • Cut the burrata into quarters (or more). It is firmer on the outside and melty creamy inside.
  • Combine summer’s bounty with freshly picked garden tomatoes or heirloom tomatoes, basil, and greens at their peak of freshness in this colorful salad!
  • Dress this salad simply with olive oil, sea salt, pepper and a bit of balsamic glaze or vinegar.
  • Add grilled chicken, chopped salami, or sliced prosciutto and make it a main dish!

Ingredients Needed

With flavors similar to a caprese salad topped with rich creamy cheese, this burrata salad recipe is easy and delicious.

Burrata – Burrata cheese is soft and extra creamy. If you can’t find burrata, opt for a fresh mozzarella or bocconcini.

Tomatoes – Bright red tomatoes fresh from the garden or farmer’s market are the best choices. Cherry tomatoes or grape tomatoes can be cut in half.

Greens – Arugula has a bright peppery bite that goes with anything. Choose salad greens like romaine, spinach, kale, or any crispy leaves that hold up well with chunks of tomatoes and cheese. Add in fresh herbs like basil, parsley, or even a bit of fresh dill.

Drizzle – Oil and balsamic vinegar (or glaze) are really all this salad needs for dressing. Pesto is a great addition to all of your fave summer salad recipes! If you’d prefer, you can use a balsamic vinaigrette.

Optional Variations

Other add-ins can be thinly sliced fresh peaches, figs, pickled asparagus, red onions, beets, shredded brussels sprouts, olives, or capers. Add a squeeze of lemon juice or a sprinkle of fresh herbs.

How to Make Burrata Salad

Gourmet has never been so easy.

  1. Assemble the greens on a large platter or in a salad bowl.
  2. Place the sliced tomatoes and red onions over the greens.
  3. Arrange torn or cut pieces of burrata cheese over the tomatoes and drizzle with dressings (per recipe below).
  4. Sprinkle with toasted pine nuts and serve.

How to Serve Tomato Burrata Salad

Serve this light & flavorful salad with a side of homemade crostini toasts or a few crunchy croutons on top. We love it as a side to a great ribeye or other recipes from the grill!

Tomato Burrata Salad

Made with fresh garden tomatoes and drizzled with a tangy balsamic glaze and some hard-to-resist burrata cheese, this salad is one for the recipe books!

Prep Time 15 minutes

Cook Time 10 minutes

Total Time 25 minutes

  • Place greens on a plate or in a salad bowl.

  • Slice the tomatoes ¼” thick and place over the greens. Top with red onion.

  • Tear the barrata into pieces and arrange over the tomatoes.

  • Drizzle with oil, balsamic glaze, and pesto if using. Sprinkle with pine nuts and serve.

This salad pairs well with steaks or grilled foods. 
This salad is best served when prepared.
We prefer a simple dressing (oil and vinegar) with a bit of pesto. Balsamic vinegar can be used in place of balsamic glaze.
